Ingredients
  

  • 1 ½ lbs boneless skinless chicken breast cut into 1-inch cubes
  • 2 large eggs lightly beaten
  • ½ cup all-purpose flour
  • ½ cup cornstarch
  • ¾ cup Thai sweet chili sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • 3 cups neutral oil canola or peanut for frying
  • cup sliced green onions for garnish

Method
 

  1. In a bowl, whisk eggs with salt and pepper.
  2. Mix flour and cornstarch in a shallow dish.
  3. Dip chicken cubes in egg, then coat with the flour-cornstarch mixture.
  4. Heat oil in a deep pot to 350°F (175°C).
  5. Fry chicken in batches for 5–6 minutes until golden and fully cooked. Drain on paper towels or a wire rack.
  6. Warm sweet chili sauce in a pan or large bowl.
  7. Toss the fried chicken in sauce until evenly coated.
  8. Garnish with green onions and serve hot over rice or noodles.

Notes

  • For a healthier version, bake at 425°F (220°C) for 14–18 minutes or air fry at 390°F (200°C) for 12 minutes.
  • Marinate chicken in sweet chili sauce, soy sauce, garlic, and lime for 30 minutes before cooking for deeper flavor.
  • Always coat chicken in sauce just before serving to maintain crispiness.
