Ingredients
  

  • 2 ½ cups all-purpose flour
  • 1 tbsp pumpkin pie spice
  • 2 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter softened
  • ½ cup brown sugar
  • ¾ cup granulated sugar
  • 1 cup canned pumpkin puree
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 ½ cups semi-sweet chocolate chips

Method
 

  1. Preheat oven to 375°F (190°C). Line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, pumpkin pie spice, baking soda, baking powder, and salt.
  3. In a large bowl, beat softened butter with brown and white sugars until light and fluffy.
  4. Add pumpkin puree, egg, and vanilla extract; mix until smooth.
  5. Gradually combine the dry ingredients with the wet mixture until just smooth.
  6. Fold in the chocolate chips gently.
  7. Drop tablespoon-sized scoops of dough onto prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes until edges are golden brown. Let cool on baking sheets for a few minutes before transferring to a wire rack.

  • Chill dough for 30 minutes for thicker cookies.
  • Do not overmix the dough to prevent dense cookies.
