Heat a large skillet over medium-high heat and add oil. Add ground turkey and cook for 6-7 minutes until browned and no longer pink. Break it apart with a spatula as it cooks.
Lower the heat to medium and add minced garlic. Cook for 1 minute, stirring constantly to avoid burning.
In a small bowl, whisk together honey, soy sauce, rice vinegar, and sesame oil. Pour the sauce over the cooked turkey, stirring to coat evenly.
Let the mixture simmer for 3-5 minutes until the sauce thickens slightly and coats the turkey.
Stir in green onions and garnish with sesame seeds (optional). Serve over rice, noodles, or in lettuce cups.
