Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
Separate eggs. Place whites in one bowl and yolks in another.
Add cream of tartar to egg whites and whip until stiff, glossy peaks form.
Blend cottage cheese until smooth. Mix with yolks, salt, and any optional ingredients until creamy.
Gently fold the whipped whites into the yolk mixture in three additions, preserving as much air as possible.
Scoop the mixture into 6–8 rounds on the baking sheet. Shape evenly.
Bake for 25–30 minutes until golden brown and set.
Cool completely on the baking sheet before removing.
