Ingredients
  

  • 1.5 lbs beef chuck roast (cut into 1-inch cubes)
  • 1 packet packet dry onion soup mix
  • 10.5 oz can low-sodium cream of mushroom soup (or substitute with cream of chicken soup)
  • 14 oz low-sodium beef broth
  • 1.5 tablespoons lemon pepper seasoning or seasoning of choice
  • 2 tablespoons  butter  butter (for thickening the gravy)
  • 3 tablespoons flour (for thickening the gravy)

Method
 

  1. Prepare the Ingredients: Cut the beef chuck roast into 1-inch cubes. Sprinkle the lemon pepper seasoning over the beef cubes, ensuring an even coating.
  2. Combine in Crock Pot: In the Crock Pot, mix together the dry onion soup mix, cream of mushroom soup, and beef broth. Whisk until well combined.
  3. Add Beef: Place the seasoned beef cubes into the Crock Pot and stir everything together to coat the beef in the gravy mixture.
  4. Slow Cook: Cover and cook on low for 6-8 hours. The beef should be tender and fully cooked through.
  5. Make Gravy (Optional): About 20 minutes before serving, melt butter in a medium saucepan over medium heat. Add flour and whisk to create a roux. Gradually pour in 2 cups of the beef broth mixture from the Crock Pot, whisking until smooth. Let it come to a boil and thicken, then pour it back into the Crock Pot with the beef. Stir well.
  6. Serve: Serve the beef tips over rice, mashed potatoes, or egg noodles. Enjoy!

Notes

  • Customization: You can substitute the cream of mushroom soup with cream of chicken or cream of celery soup. Feel free to adjust the seasoning to your preference.
  • Vegetable Add-ins: Add carrots, potatoes, or green beans to the Crock Pot to make the dish more hearty.
  • Gravy Thickness: If you prefer a thinner gravy, skip the roux. If you want it thicker, you can increase the amount of butter and flour in the roux.
