Ingredients
  

  • 2 medium zucchinis grated and drained
  • 2 cloves garlic minced
  • ½ cup panko breadcrumbs plus extra for coating
  • ¼ cup grated Parmesan cheese
  • 1 large egg lightly beaten
  • 2 tbsp chopped parsley
  • ½ tsp salt
  • ¼ tsp black pepper
  • Oil for frying or brushing

Instructions
 

  • Grate zucchini, sprinkle with salt, and let sit for 10 minutes. Squeeze out excess moisture.
  • In a bowl, mix zucchini, garlic, breadcrumbs, Parmesan, egg, parsley, salt, and pepper until combined.
  • Shape into 1–1½ inch balls. Roll in extra breadcrumbs if desired.
  • For frying: Heat oil to 350°F (175°C) and fry for 2–3 minutes until golden.
  • For baking: Preheat oven to 400°F (200°C), brush balls with oil, and bake 18–20 minutes, turning halfway.
  • For air frying: Preheat to 375°F (190°C), spray balls with oil, and air fry for 10–12 minutes, shaking halfway.
  • Serve hot with marinara, tzatziki, or garlic aioli.

Notes

  • Squeeze zucchini thoroughly to prevent sogginess.
  • For gluten-free, use GF breadcrumbs.
  • Cheese-stuffed versions work great — insert mozzarella cubes before shaping.
  • Refrigerate leftovers for up to 3 days or freeze for 2 months.
