- 2 medium zucchini sliced into rounds or half-moons
- 2 medium yellow squash sliced into rounds or half-moons
- 4 tablespoons chopped fresh basil
- 2 tablespoons thinly sliced green onion
- 1/2 teaspoon dried thyme
- 3/4 teaspoon garlic powder
- 1 cup grated mozzarella cheese
- 1/2 cup coarsely grated Parmesan cheese plus extra for topping
- Salt and fresh ground black pepper to taste
- Olive oil or non-stick spray for greasing the baking dish
Preheat the oven to 350°F (180°C). Grease an 8×8 or 8×11 baking dish with olive oil or non-stick spray.
Wash and slice the zucchini and yellow squash. Chop the basil and slice the green onion.
In a large mixing bowl, combine the zucchini, yellow squash, basil, green onion, dried thyme, garlic powder, mozzarella cheese, and Parmesan cheese. Season with salt and black pepper.
Transfer the mixture to the prepared baking dish, spreading it out evenly.
Bake uncovered for 25-30 minutes, or until zucchini is tender.
Sprinkle the remaining mozzarella and Parmesan cheese on top, and bake for an additional 10-15 minutes until the cheese is melted and golden brown.
