Ingredients
  

  • 1 ¾ cups whole wheat flour or half all-purpose, half whole wheat
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 1 cup grated apple
  • 1 cup diced apple ¼-inch cubes
  • cup melted coconut oil or olive oil
  • ½ cup maple syrup or honey
  • 2 large eggs
  • ½ cup Greek yogurt any type
  • ½ cup applesauce
  • 1 teaspoon vanilla extract
  • 1 tablespoon turbinado sugar for topping

Method
 

  1. Preheat oven to 425°F (220°C). Line or grease a 12-cup muffin tin.
  2. In a large bowl, whisk flour, baking powder, baking soda, cinnamon, and salt. Stir in grated and diced apples.
  3. In another bowl, whisk oil and maple syrup. Add eggs, yogurt, applesauce, and vanilla, mixing until smooth.
  4. Gently fold wet ingredients into the dry until just combined. Do not overmix.
  5. Divide batter evenly into muffin cups. Sprinkle with turbinado sugar.
  6. Bake at 425°F for 5 minutes, then lower oven to 350°F (175°C) and bake another 10–12 minutes.
  7. Cool in the pan for 5 minutes, then transfer muffins to a wire rack.

Notes

  • Store muffins in an airtight container for 2 days at room temperature or up to 5 days in the fridge.
  • Freeze for up to 3 months; reheat in the microwave for 20–30 seconds.
  • For vegan muffins, replace eggs with flax eggs and yogurt with non-dairy yogurt.
  • Add walnuts, pecans, or raisins for extra flavor and texture.
