Ingredients
  

For the Muffins:
  • 2 large apples Granny Smith or Honeycrisp, peeled, cored, and diced
  • 2 cups all-purpose flour
  • 3/4 cup brown sugar packed
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup unsalted butter melted
  • 1 teaspoon vanilla extract
For the Glaze:
  • 2 tablespoons powdered sugar
  • 1 –2 tablespoons milk adjust for glaze consistency

Method
 

  1. Prepare the Apples: Peel, core, and dice apples into small chunks. Toss with cinnamon and a sprinkle of sugar.
  2. Mix Dry Ingredients: In a large bowl, whisk together flour, brown sugar, baking powder, cinnamon, and salt.
  3. Combine Wet Ingredients: In a separate bowl, whisk together eggs, milk, melted butter, and vanilla extract.
  4. Mix the Batter: Gradually add wet ingredients to dry ingredients, stirring until just combined. Fold in the spiced apples.
  5. Fill the Muffin Tin: Spoon batter into a greased or lined muffin tin, filling each cup about 3/4 full.
  6. Bake: Bake at 350°F (175°C) for 20-25 minutes, until golden brown and a toothpick comes out clean.
  7. Glaze the Muffins: Whisk powdered sugar and milk to make the glaze. Drizzle over warm muffins.

Notes

  • Use Granny Smith apples for a balance of sweetness and tartness.
  • Cinnamon sugar can be sprinkled on top before baking for extra sweetness and crunch.
